1. Scrambled Eggs
Chop avocado, tomato, fresh cilantro (to taste) and drop it right onto your warm scrambled eggs. It's a yummy twist to an already delicious dish. You may even want to add some hot sauce!
2. Guacamole
Mix a mashed avocado, chopped red onion (to taste) and diced tomato. Sometimes I like to add a little sea salt or cilantro. If you are not going to eat it all in one sitting, you will want to add a little lime juice to keep it from browning.
3. Salads
Sliced avocado is a very nice addition to just about any salad. I like adding it to
Caesar Salad along with a little tomato.
4. Pasta
Any pasta will do. My current favorite is black bean spaghetti. Squeeze fresh lime over your cold or warm, cooked pasta (or toss with olive oil). I add chopped avocado, tomato, red onion and cilantro. You can add any vegetables that suit your taste buds!
5. Sandwiches
A long time favorite of mine is some good bread or a bagel with cream cheese spread, avocado and tomato. However, avocado can be added to any sandwich. If you are not eating bread, you can role everything in a slice of turkey, lettuce or your favorite leafy greens.
6. Plain
Eating avocado right out of the skin is a perfectly lovely snack. The taste is anything BUT plain! Just cut in half, remove the seed, eat with a spoon and enjoy!
7. Crackers
Top your favorite crackers with a slice of avocado. You can also add your favorite meats and cheeses.

- Mouth watering combinations
Avocado, tomato, red onion and lime. This combo (chopped or mixed) can be added to any
of the above and will not disappoint if you love these flavors!
- Gluten free pasta substitutes
Noodles made of rice, quinoa, or black beans. Yes, they taste good! Decide which you like best!
- Gluten free cracker substitutes
Rice or nut and rice crackers are both great choices.
- Bread substitutes
Any sliced lunchmeat, lettuce or leafy greens. Roll ingredients inside as if it were a tortilla.
- How to store your leftover avocado
When only using half of your avocado, leave the seed in your unused half. Take the empty skin from your used half, put it back together and store in zip lock bag in fridge. The seed helps keep it from browning.
